Wine giving at Restaurant



At luxurious restaurants for wine giving specially prepared waiter - somelie (sommelief) answers. This trade has appeared in the Middle Ages in France, when duties somelie included manufacturing and selection of drinks to a table of the king. This expert should be the excellent expert on the wines, capable intelligibly characterises any wine and competently to recommend this or that grade to the dishes ordered by visitors.


The bottle to the client is brought in the corked kind that it could make sure that is its order and wine not touched. Then a bottle uncork on a little table of the visitor, and a stopper put on a cloth or a saucer that it could check up its quality: whether the stopper of an unpleasant smell has, whether on it has crumbled or has not become impregnated with wine. Also on a stopper year of manufacturing, the name of wine and the name of wine economy should be specified, this data should coincide with data on a label. Then somelie or the waiter pour a wine small amount in a glass for tasting. Also at restaurant it is possible to order only a few glasses. The wine which is on sale on pouring, is called house vine (wine of the given institution). Usually it not especially quality, and frequently exhausted as in open bottle which some time intends to store, is necessary to download the inert gas superseding oxygen, fatally influencing properties of wine. However it is done only by very high-class institutions.


At some restaurants, especially it is a lot of them in America, it is authorised to bring own wine which differs any especial qualities or which is not present in the wine menu of restaurant. However for opening of a bottle and using glasses it is necessary to pay, this sum makes 5 - 25$.
