Tokaji Wine
Tokaji named in honour of small town Tokaj in the north of Hungary in which it has appeared for the first time. Many experts consider that during the Soviet period quality of Tokajsky wines has sharply worsened, as, aspiring to increase volumes of their manufacture, manufacturers did not give a proper attention to technology observance. A climate and soils of Hungary are ideal for cultivation of grapes of Furmint (Furminf), Harslevelju (Harslevelii) and Muskat Lunel (Muscat Lunel) which are used for manufacturing of Tokaja. In the course of maturing under the influence of a noble mould fruits wither, dry and are filled with the big maintenance of sugar. Such grapes name aszu – àññó that in transfer – dried up. From here there is a name of one of the most well-known wines - Tokaji Aszu. It make of the berries collected by hands and sort on 25-killogramovym to baskets – "puttons". Then, for manufacturing of sweet wine in a mash add such 3 baskets, and for very sweet – five-six. The endurance occurs in small wooden flanks within 5-7 years then wine spill in bottles. This drink contains 12 – 14 % of alcohol.
Tokaj fault represents other grade Tokaji Eszencia. It receive from the fruits most sated with sugar, and also in manufacture use a special grade of yeast. Wine maintain in flanks not less than 10 years. As a result receive a drink with the low maintenance of alcohol 8 – 10 %.
Less qualitative wine is Szamorodni (Native). Its name speaks for itself. Fruits for manufacture are not exposed to sorting, therefore wines turn out various level of sweet — depending on that, how many has much got the dried fruits. It causes division Szamorodni on sweet (Edes) and dry (Szaras).
All Tokajsky wines differ golden colour, a bouquet of aromas of raisin, honey, plum and taste of apricots, oranges, unripe nuts.
In the last time in Hungary in connection with change of standards of manufacturing of wine there were new special kinds: «Tokajsky Forditash» and «Tokajsky Mashlash». As all Tokajsky wines spill in the standardised bottles – colourless, with a narrow neck.
